How to Store Olive Oil So It Doesn't Go Rancid

Three things degrade olive oil: light, heat, and oxygen. Nearly every storage mistake is one of these three in disguise.

Light

UV and even regular kitchen light break down polyphenols and chlorophyll over time. This is precisely why quality producers, Musai included, bottle in dark glass rather than clear — clear-bottled oil on a sunny windowsill can lose noticeable quality within weeks.

Heat

Storing oil next to the stove or oven — visually convenient, chemically counterproductive — accelerates oxidation. A cupboard, pantry, or any spot away from direct heat sources keeps the oil closer to its lab-tested numbers for longer.

Air

Why the fridge is the wrong answer

Refrigerating olive oil makes it turn cloudy and semi-solid as its fats solidify at low temperature — a purely physical, fully reversible change, not spoilage, but it's commonly mistaken for the oil having gone bad. Bulk bottles change the math
