"Rancid" gets used loosely for any olive oil someone doesn't like. The real chemistry is more specific — and knowing the difference helps you tell a genuinely spoiled oil from one that's just mild or mediocre.
What rancidity actually is
Rancidity is oxidation of the oil's fatty acids, producing new compounds that taste and smell distinctly unpleasant — often described as crayon-like, waxy, or like old walnuts. It's measured in a lab via peroxide value; Musai's October 2025 harvest tested at 6.00 meqO₂/kg, well under the 20 meqO₂/kg legal ceiling for extra virgin, which is part of why a fresh, well-made oil resists rancidity longer than a mass-market one already close to the limit at bottling.
Rancid vs. just mild
- Rancid: waxy, crayon-like, stale-nut smell; unpleasant, not just neutral
- Mild/low-quality but not rancid: simply flat and flavorless, no pepperiness, no defects — often refined oil with most of its character removed, not spoiled oil
- Fresh, high-quality: grassy, sometimes fruity aroma, a peppery catch at the back of the throat (from oleocanthal) — the opposite of rancid, and the sign of genuine freshness

The oils that fail this test most often
In practice, rancidity shows up most often in two situations: a large bulk tin bought for economy and used slowly over many months at home, and restaurant or deep-fryer oil reused past the point it should have been discarded. One flavor people confuse with rancidity
The opposite mistake also happens: a genuinely fresh, high-polyphenol oil's peppery catch and noticeable bitterness gets flagged as "something's wrong" by someone used to mild, refined-tasting oil.
