Refrigeration genuinely slows the chemistry that degrades olive oil — and it also turns a clear golden liquid into a cloudy, semi-solid block. Both things are true, which is why the real answer is "it depends what you're optimizing for," not a flat yes or no.
What refrigeration actually does
Cold slows lipid peroxidation — the process where oxygen breaks down the oil's fatty acids, creating off-flavors and degrading the polyphenols that make a good extra virgin oil worth buying in the first place. Research published in the Journal of Agricultural and Food Chemistry found refrigerated olive oil retained meaningfully more polyphenols over extended storage than oil kept at room temperature. On pure chemistry, refrigeration wins.
The tradeoff nobody mentions on the label
Olive oil's monounsaturated fat content means it solidifies at fridge temperature — it turns cloudy, thickens, and can set almost solid depending on how cold the fridge runs. This is completely harmless and fully reverses once the oil returns to room temperature, but it's inconvenient: cold, thick oil doesn't pour cleanly, and cloudiness looks to many people like spoilage even though it isn't.
The practical recommendation
For a standard bottle you'll get through in a few months of normal cooking, a cool, dark cupboard away from the stove is the more practical choice — you get most of the shelf-life benefit without fighting cloudy oil every time you reach for it. When refrigeration genuinely makes sense
The calculation changes for a large-format bottle you bought to save money but won't finish quickly. In that case, decant a smaller amount into a daily-use bottle kept in the cupboard, and refrigerate the rest — you get the oxidation-slowing benefit for the oil that's sitting unused, and normal, easy-to-pour oil for the bottle you're actually cooking with. It's a genuinely useful trick for anyone buying in bulk, not a universal recommendation to chill your everyday bottle.
