"Olive oil lowers cholesterol" is repeated constantly and is broadly true — but the mechanism and the real-world size of the effect are more specific than the soundbite suggests.
What actually happens
Replacing saturated fat (butter, lard, tropical oils) with extra virgin olive oil's predominantly monounsaturated fat modestly lowers LDL ("bad") cholesterol as part of a broader dietary pattern — this is the substitution effect, not a standalone superfood effect from adding olive oil on top of an otherwise unchanged diet.
The polyphenol-specific claim
Separately, the EU-recognized health claim (Regulation 432/2012) is more precise: oils high enough in hydroxytyrosol and its derivatives — as Musai's tested harvest is, at 19.44 mg per 20g, discussed in our benefits article — help protect blood lipids from oxidative stress, a distinct mechanism from the LDL-lowering effect of the fat swap itself.
A large new study sharpened this picture considerably
Research due for publication in the American Heart Journal in early 2026, covered in advance by Harvard Health, tracked over 7,000 participants for nearly five years and found that higher intake of extra virgin olive oil specifically was linked to lower cardiovascular risk, while intake of refined "regular" olive oil showed no such association in the same data — a direct real-world echo of the polyphenol-specific EU health claim discussed in our benefits article. The fat profile of both oils is nearly identical; the polyphenols are what differs.
What "a drizzle a day" actually means in practice
The American Heart Association's own framing of this research talks about replacing other fats with olive oil, not simply adding it — consistent with the substitution effect described above.
